Recipe: Corned Beef Hash

8:50 PM

I have been cooking a lot since we moved to Makati. We figured it would be cheaper to cook rather than buy food all the time. This is one of the few recipes that I started cooking here. It's easy and doesn't take a lot of time to prepare. Jeff called it corned beef hash, so let's call it that. ;)

You will only need very few ingredients for corned beef hash, and you can easily find it in your home. This is best as baon at school or work. Or merienda at home!

Ingredients: (makes 6 servings)
1 can corned beef (I used the Highlands brand because it's on sale in Landmark)
2 pieces medium sized potatoes
egg
onion
garlic

Steps:

1. Peel the potatoes.

2. Using a cheese grater, grate the potatoes and drain the extract. You can use a piece of cloth to squeeze out the extra liquid from the potatoes, but since I don't have cloth, I used paper towels which worked fine.

3. Chop the onions and garlic, and put it in the same bowl. Add in the corned beef and egg. The egg helps bind the mixture.

4. Heat the pan. Get a spoonful of the mixture and lay it on the pan nicely. I made a rectangle-ish shape, but you can also do a round one if you plan to make it a patty to your pan de sal. ;)

5. Drain the extra oil and serve while hot.

Enjoy your corned beef hash! I'm sure the kids will love this. ;)
